Daily sourdough bread
sourdough starter
bread flour

In the morning, quickly stir together 1/2 cup sourdough starter with 1/3 cup bread flour & 5 t water. Raise in oiled, covered glass bowl for 6 hours at room temperature.
Knead, adding 1 1/4 cup bread flour, 1/2 cup water, 1 t salt. Raise in oiled, covered glass bowl for 2 hours at room temperature.
Do a letterbox fold and put into a colander with a floured towel. Cover and raise at room temperature for 3 - 5 hours.
Bake for 30 minutes on a stone, in preheated 450 degree oven; carefully removing from towel, placing on hot stone, slashing & tossing ice cubes on floor of oven. Tent with aluminum foil as needed.
